Vegan Wellington

The Wellington is a distinguished English dish consisting of a sirloin steak wrapped in puff pastry. Very suitable for Christmas, at RevoluGreen! We wanted to "veganize" it by substituting the piece of meat for our "Mediterranean Style" Bites and Portobello mushrooms.

INGREDIENTS

  • 8 sheets of phyllo dough
  • 2 packs of Plant-based "Mediterranean style" Bites
  • 1 leek
  • 1 spring onion
  • 300 gr portobello mushroom
  • 1 tablespoon of flour
  • 50 gr of fighting nuts
  • 50 grams of raisins
  • 1 shot of Porto or Pedro Ximénez
  • Salt and pepper, olive oil

 

PREPARATION

Chop the leek and spring onion and put in a pan with a good drizzle of oil. While the vegetables are cooking, clean and chop the mushrooms. Add the Porto and leave another 5 min. Add the flour and mix well. Add the nuts, the drained raisins and the Bites, mix everything well and remove from the heat. Turn on the oven at 200º. Roll out a sheet of filo pastry and paint with oil. Place another on top and repeat the operation, until completing the 8 layers. Paint the entire surface of the roller with oil.
