Artichokes with potato and fried Palacios chorizo

Artichokes are a particularly healthy and delicious vegetable.

INGREDIENTS

  • Artichokes
  • Potatoes
  • Palacios chorizo
  • 1 spring onion
  • Extra-virgin olive oil
  • Salt

PREPARATION

Finely dice the spring onion and sauté it in a cooking pot with a splash of oil.

Peel and chop the potatoes and add them to the pot.

Peel and quarter the artichokes and add them to the pot. Season.

Cover the mixture with water and boil for 20 minutes.

Chop the Palacios chorizo into medallions and fry them in a pan with a dash of oil.

Add the fried chorizo to the artichokes and serve.
